Perhaps the first two good fighting game years were:
1984:
Karate Champ
Karate Champ: Player VS. Player
Kung-Fu (ZX Spectrum)
Urban Champion
Karateka
Great Swordsman
And 1985:
Yie Ar Kung-Fu (Arcade and NES / MSX versions)
Galactic Warriors
Hiryu no Ken / Shanghai Kid
Onna Sanshirou / Typhoon Gal
Yie Ar Kung-Fu II: The Emperor Yie-Gah
Kinnikuman Colosseum Deathmatch
The Way of the Exploding Fist +
But perhaps the largest years were in the '90s, especially 1993 and 1994. In the blog link found in this thread, there is a list of the first fighting games in history with each year added to them, which should give you some ideas on what you believe is the best year. |

I'm going to go for 1996 as best fighting game year. These are some of the best fighters ever created in my opinion.
Breakers
Kizuna Encounter
Samurai Shodown 4
Street Fighter Alpha 2

Nice to see my beloved Yie Ar Kung Fu get a mention, it is one game that is still a joy to play today.
This is tricky I gotta agree with Merlin , 96 was great for fighters, SS4, KOF 96, Virtua Fighter 4, Ninja Masters a very strong year.
But Im gonna plump for 99, why see below.

KOF 99
MOTW
Power Stone
Soul Caliber
cant think of a year as strong as that although the years 94-2000 have plenty to love, I guess the golden years for beat em ups.

Interesting topic, Parrothead. The Nineties surely can be called the golden decade of Fighting games, although the later Eighties also had their hits. According to this chart I found on NeoGeoKult, 1994 was the year with the highest number of Fighting game releases, mainly due to the SFII and MK hype I suppose (and no, I'm not exactly an admirer of all these countless SFII versions).
As for my preference, I certainly have difficulties to chose one specific year. The period from 1994 to 1999 offers the range of fighting games I love most, that's for sure, but all these titles from all possible developers are scattered throughout all years.
After all I do agree with Merlin about '96, a wide range of top-notch titles saw the light of the Gaming world back then.

i think i have to go with 96 though i am very tempted by Ste saying 1999 cos i love Soul Calibur 1 and Powerstone, and MOTW of course. Third Strike is not bad either!
97 has some classy games ---> Last Blade, Rival Schools, and Tekken 3
but i do have to go for 1996 for all those games listed above really like Waku 7, Breakers, KOF96 and AOF3 especially.

Blood Warrior is one epic game, always good for a laugh! One of the digitized sprites Fighter I like most. 
Battle K-Road from the same year is quite fun too, a nice shot from Shmup-King Psikyo.

1994, 1997 and 1999 were all particularly good years so I can understand why people chose
them. Kaiser Knuckle (and Dan-Ku-Ga) was another outstanding fighter from '94. One year no-one mentioned yet is 1995 which I'd consider the second best after 1996.

I've never really enjoyed Battle K Road all that much. Not so keen on the feel of the gameplay and the pauses whenever one of the fighters gets knocked down interrupts the flow of the game.
